Ingredients

1.5 cup plain wholemeal flour

1 egg

¾ cup brown sugar

½ tsp baking powder

1 scoop (30g) True Protein Plant Protein in Rich Chocolate

½ tsp cinnamon

100g unsalted butter, melted

100g dark chocolate, roughly chopped

Method

  1. Preheat the oven to 160 degrees Celsius and line a baking tray with baking paper.

  2. In a large bowl, add the plain flour, egg, brown sugar, baking powder, protein powder and cinnamon. Stir well until all ingredients have been combined.

  3. Add the butter to a cup and melt in the microwave for 45 seconds. Then add it to the bowl and stir through.

  4. Roughly chop up 100g of dark chocolate, add to the mixture and stir through.

  5. Roll the mixture into 8 cookies using the palms of your hands and place onto the baking tray evenly spread apart. You may need to cook two separate batches to make sure that the cookies don’t spread and join to other cookies.

  6. Bake in the oven until slightly golden.

  7. Leave to cool and enjoy with a cup of tea.
