Ingredients:
1.5 cups plain flour
50g (6.5 level tbsp) True Protein WPI 90 in French Vanilla
1 tsp baking powder
1 cup skim milk
1 egg
1/3 cup grapeseed oil
1/3 cup granulated sweetener
2 tbsp lemon juice
2 tsp lemon zest
Method:
1. Preheat oven to 180 degrees celsius and line a medium sized baking tray with baking paper.
2. Add the flour, protein powder and baking powder to a bowl and mix.
3. Into another bowl, add the milk, egg, oil, sweetener, lemon juice and lemon zest and whisk until combined.
4. Add the wet ingredients to the dry and fold until just combined. Pour into lined baking tray and place into the oven to bake for 15 minutes or until a toothpick when inserted comes out clean. Allow to cool for 30 minutes before cutting and enjoy!
