Ingredients
Base
1 cup dates
1 cup almonds
1/2 cup True WPI90 Rich Chocolate
1 cup buckwheat
1/2 cup coconut oil
Pinch of salt
Mint Filling
1 cup of soaked almonds (drain the water)
1/2 cup coconut oil
1/4 cup coconut yoghurt
2 tbsp peppermint essence
1 tsp vanilla essence
1/4 cup maple syrup
1 pinch salt
Chocolate Top Layer
1/3 cup of soaked cashews
1/2 cup True Protein Cacao Powder
1/2 cup coconut oil
1/4 cup maple syrup
1 tsp vanilla essence
Pinch of salt
Method

Blend base ingredients together in food processor and press into tray

Blend mint filling ingredients together in food processor until creamy, add to base & freeze

Blend the chocolate top layer ingredients together until smooth and creamy, once the middle filling is firm/frozen add the chocolate layer on top & put back into freezer to set

Once frozen, cut into squares and store in the freezer
