Protein Doughnut Holes

Ingredients

1 cup self-rising flour

1 ¼ cup low-fat Greek yogurt

1 scoop True Protein WPI90 in French Vanilla

1 tbsp granulated sweetener (we used monkfruit)

2 tbsp lite butter, melted

1/4 cup granulated sweetener

3 tsp ground cinnamon

 

Method

  1. Place the flour, yogurt, protein powder and sweetener into a large bowl and mix until combined. Once combined knead the dough for 3 minutes. Take about a tablespoons worth of dough and roll into a ball. Repeat until all the dough is used.

  2. Fill a medium sized saucepan with water and bring to the boil, add in ¼ tsp of baking powder. Place the balls into the water and boil for 30 seconds, this process helps the doughnuts become more fluffy. After 30 seconds use a slotted spoon to remove the balls and put them onto a plate, they will dry quickly.

  3. Next, place the balls into an air-fryer that’s been lined with baking paper and air-fry for 8-10 minutes at 180 degrees Celsius until golden brown.

  4. Allow the balls to cool for 10 minutes. Mix together the sugar and cinnamon. Coat the balls in the melted butter and then roll in the sugar mixture. Enjoy!
