2 cups rolled oats
2/3 cup desiccated coconut
2 scoops (60g) WPI 90 in French Vanilla
1/3 cup smooth peanut butter
1/2 cup rice malt syrup
1/3 cup dried cranberries
1/4 cup pumpkin seeds
60g white chocolate chips
1/2 tsp salt
Place the oats, desiccated coconut and protein powder into a bowl and mix until combined.
Next, add the peanut butter and rice malt syrup into a small saucepan and heat on low until smooth and melted, stirring occasionally.
Add this to the dry ingredients and mix until everything is combined, you may need to use your hands as it’s quite dense.
Add the cranberries, pumpkin seeds, white chocolate and salt to the bowl and mix until evenly distributed throughout.
Press into a small, lined baking tray and place into the fridge to set for 2 hours before cutting into bars. Enjoy!
