1 Tbsp chia seeds + 2.5 Tbsp water
4 Tbsp olive oil
1 Tbsp honey
1 tsp vanilla bean paste
1 cup oats, blended into a flour
1/2 cup rolled oats
1/2 cup puffed rice
1 Tbsp sesame seeds
1 Tbsp flax seeds
1 scoop (30g) True Plant Protein in French Vanilla
Dark chocolate chips, to decorate
Preheat oven to 180 degrees Celsius fan forced.
Add the water and chia seeds in a small bowl and set aside to gel for a few minutes.
Mash the banana in a large bowl.
Add in the olive oil, honey and vanilla bean paste and mix.
When the chia mixture has thickened, stir it through the wet mixture.
Add the dry ingredients into the wet mixture and combine.
Form approx. 12 cookies and bake for about 20 minutes or until golden.
Allow to cool before serving and enjoy!
