Picnic Peanut Butter Crunch Balls

Makes 20

Prep time: 15 minutes

Setting time: 30 minutes

Ingredients

 

3 cups gluten-free puffed rice cereal

1 scoop True COLLAGEN Rich Chocolate

2 scoops True WPC80 Rich Chocolate

½ cup crushed roasted unsalted peanuts

2 Tbsp cacao powder

1 cup smooth peanut butter

2/3 cup rice malt syrup

1 Tbsp coconut oil

120g dark chocolate, melted

 

Method

 

  1. Add the rice cereal, collagen powder, protein powder, peanuts and cacao powder into a bowl and stir until combined. Set aside.

  2. Place the peanut butter, rice malt syrup and coconut oil into a saucepan over medium heat and stir until smooth. Allow to cool for five minutes.

  3. Pour the peanut butter mixture over the dry ingredients and mix until everything is evenly distributed and combined.

  4. Roll into balls and place into the freezer to set for 30 minutes. In the meantime, melt the chocolate by placing it into a microwave-safe bowl and microwaving in short bursts, stirring every 20 seconds.

  5. Drizzle the melted chocolate over the balls then return to the fridge until set. These can be stored in the fridge or freezer.
