Apple, Pepita & Raisin slice

Ingredients

 

1 1/2 cups self raising flour 

1/2 cup rolled oats 

1/2 cup pumpkin seeds 

2 scoops (60g) True Plant Protein in French Vanilla

1/2 cup coconut sugar 

1 Tbsp chia seeds 

1 1/2 cups almond milk 

1/4 cup olive oil 

1 large apple, diced 

1 Tbsp raisins 


Method

 

  1. Preheat oven to 180 degrees Celsius fan forced. 

  2. In a large bowl, combine the flour, oats, pumpkin seeds, protein powder, coconut sugar and chia seeds. 

  3. Whisk together the almond milk and olive oil in a small bowl and add into the dry mixture. 

  4. Fold through the apple and raisins. 

  5. Transfer mixture into a lined 20x20cm brownie tin and sprinkle with extra oats and pepitas if desired. 

  6. Bake for approx. 40-45 minutes, or until a skewer comes out dry when inserted. 

  7. Allow to cool completely before slicing.
