Makes 14 Balls
1 cup almond meal
1 cup oat flour or ground oats
2 scoops True Protein Lean Post in Vanilla
1/3 cup rice malt syrup
½ cup almond butter
¼ cup almond milk
1 tsp vanilla extract
½ tsp salt
100g dark chocolate chips
100g dark chocolate for melting
Place the almond meal, oat flour and protein powder into a bowl and stir until combined.
Next, place the rice malt syrup and almond butter into a microwave safe bowl and microwave stirring every 15 seconds until melted and smooth.
Stir the almond milk into this mixture along with the vanilla and salt.
Pour this onto the dry ingredients and mix until combined, it will be quite dense so you may have to knead with your hands.
Fold through the dark chocolate chips then roll into balls, place into the freezer to set for 30 minutes.
While the balls are setting, melt the dark chocolate in the microwave, stirring every 20 seconds until melted. Take the balls out of the freezer and drizzle with the chocolate. Return to the freezer for a further 10 minutes to allow the chocolate to set, store the balls in an airtight container in the fridge or freezer.
