Banana Coconut Almond Muffins

Makes 7


1 cup self-raising flour
1/2 cup True Protein Natural Almond Butter
2 ripe bananas
2 organic eggs
1 cup desiccated coconut
1/3 cup unsweetened almond milk
3 tbsp rice malt syrup


  1. Pre-heat oven to 180 degrees Celsius and prepare muffin tray

  2. Mash the bananas in a large bowl

  3. Add the flour and desiccated coconut and combine well

  4. Crack the eggs into a separate bowl and whisk. Pour the eggs into the bowl of dry ingredients

  5. Add the almond milk, almond butter and rice malt syrup and combine well

  6. Pour the muffin mixture into the tray and bake in the oven for 15 minutes

  7. Remove from the oven and allow to cool for 10 minutes ​
