Peanut Butter Pancake Stack

Makes 8 pancakes - 1 serve

Ingredients

Pancake

1 banana
2 egg whites
1 TP scoop True Protein WPI90 Choc Peanut Butter Protein Powder
1/2 tsp bicarbonate of soda

Toppings

8 strawberries sliced
15g granola
2 Tbsp natural peanut butter, melted 
A handful of hemp seeds for garnish

Method

  1. Mash the banana into a bowl

  2. Add the egg whites, bicarbonate of soda and protein and mix well

  3. Heat the frying pan on medium heat and spray lightly with coconut oil

  4. Pour 2 Tbsp of mixture per pancake into the pan and repeat for each pancake

  5. Once the mixture starts to bubble, flip and cook the other side

  6. Set aside the pancakes when cooked and repeat the process until all mixture is gone

  7. While waiting for you pancakes to cook, in a small dish, melt peanut butter in microwave until you reach your desired consistency

  8. Layer the pancakes with your sliced strawberries fruit to create the stack and drizzle over the peanut butter sauce

  9. Once drizzled - sprinkle over granola and hemp seeds
