4 tablespoons almond butter
2 tablespoons honey
1 tablespoon maple syrup
Zest and juice one lemon (approximately 1 tablespoon of zest and 2 tablespoons of juice)
3/4 cup almond meal
3/4 cup desiccated coconut
Place the almond butter, honey, maple syrup, lemon zest and juice into a bowl and mix to combine.
Add the dry ingredients and mix to combine.
Use your hands to work the mixture to a dough consistency.
Press and shape the mixture into balls and place the balls into the fridge to set.
Eat and enjoy.
