Chocolate Tofu Loaf

Makes 1 loaf

Prep time: 20 minutes

Baking time: 45-50 minutes

Ingredients

260g silken tofu
120g banana, ripe and mashed
100ml almond milk
133ml maple syrup
1/2 tbsp apple cider vinegar
1/2 tbsp vanilla extract
2 tsp bicarbonate of soda
170g buckwheat flour

1 scoop True Plant Protein in Rich Chocolate
30g almond meal
35g cacao
Crushed nuts, chocolate chips and/or coconut flakes for toppings

Method

  1. Preheat the oven to 180 degrees Celsius

  2. In a bowl, sift dry ingredients

  3. In a separate bowl, combine wet ingredients

  4. Whisk contents of the dry bowl to the wet ingredients until evenly combined

  5. Transfer mixture to a loaf baking tin

  6. Bake for 45 - 50 minutes, or insert a skewer and if it comes out relatively clean, take out of the oven and allow to cool before removing from the tin
