Choc Granola Mini Breakfast Loaves

Mini granola loaves

These quick breakfast treats come packed with fibre goodness, and pack a fuity punch. This delicious recipe comes from the fantastic Amy Barrett @chocdaisy.

 

Ingredients 

Makes 6 mini loaves or 12 muffins/doughnuts

1 cup gluten free or wholemeal plain flour

1/4 cup True Protein Organic Cacao Powder

1/2 cup True Protein Instant Oats

1/2 cup almond meal

1 tsp psyllium husk

1/2 cup paleo granola, plus a little extra to sprinkle on top

1/2 tsp Himalayan salt

1/2 tsp vanilla powder

2 tsp baking powder

1/2 tsp bicarbonate of soda 

1/4 cup Natvia 

1/4 cup coconut oil 

1 & 1/4 cups of almond milk

1 tsp apple cider vinegar or 1 egg

1 small pear, grated 

1 small zucchini, grated

1/2 cup mixed berries to decorate 

 

Method 

1. Preheat oven to 200˚C. 

2. Grease your muffin pan or mini loaf tins.

3. Combine dry ingredients in a bowl.

4. In a separate bowl, combine wet ingredients, except grated pear and zucchini.

5. Pour the wet mix into dry, stir to combine.

6. Add grated pear & zucchini & mix again.

7. Pop into greased mini loaf tin and add a sprinkle of paleo granola and a few berries.

8. Bake for 25 mins.
