Chia Egg Banana Bread

Makes 1 loaf


1 cup True Instant Oats
½ cup coconut oil
3 mashed ripe bananas
¼ cup maple syrup
4 chia eggs
1 cup desiccated coconut
1 cup wholegrain oats
1 tsp bicarbonate of soda


  1. Preheat the oven to 180 degrees Celsius

  2. Add all wet ingredients and mix together in a large bowl until combined

  3. Add dry ingredients and fold into the wet mixture until combined

  4. Add the mixture to a loaf tin and bake for 40 minutes
