Are you stuck for time? Have a busy week ahead and need some healthy snacks to grab as you run out the door? This Banana bread with chunky chocolate is the perfect option!

Place the following wet ingredients in a blender:
4 small bananas
1/4 cup coconut oil
1/2 cup almond milk
1/4 cup coconut water
1 tsp acv
1 egg or chia egg
2 tbsp maple syrup
Remaining ingredients place in a bowl except for the chocolate:
1 & 1/4 cup almond meal
1/2 cup buckwheat
2 tsp Organic Cinnamon Powder
3 tsp baking powder
1/4 tsp bi carb
1/4 cup coconut sugar, xylitol, or Natvia
50 grams well naturally sugar free chocolate, chopped chunky
1. Preheat oven to 160, line a loaf tin with baking paper.
2. In a blender/processor combine the wet ingredients until smooth.
3. Add the rest of the ingredients except chocolate and blend to combine.
4. Add the chocolate and blend again till chopped but still kinda chunky.
5. Bake for about 1 hour.
