Omega Power Salad

Try this delicious, protein rich salad. Perfect for hot summer days!

Recipe serves 2. 

Ingredients (Salad) 

1 Lebanese cucumber, washed and diced
1/2 yellow capsicum, washed and diced
1 baby cos, washed and shredded
8 cherry tomatoes, washed and halved 
185g Hot smoked salmon, flaked
1/4 cup raw almonds
1/2 an avocado

 

Method (Salad)

1. Combine 

 

Ingredients (Dressing)

Juice of one lemon (1/4 cup)
2 tbsp extra virgin olive oil
Good pinch of pink salt
1 tbsp chia seed
1/4 tsp honey

 

Method (Dressing)

1. Combine in small jar

2. Shake till emulsified

3. Pour over salad

4. Serve
